Kapana starts as rough-cut beef, salted and thrown onto a steel plate that's been sitting over hardwood coals since 5am. The fat hits the metal and the smoke finds you before the sign does. Squeeze the lime. Don't wait for it to cool.

Vetkoek is not a side dish. A bag of mealie meal, a little yeast, hot oil — and what comes out is a golden pocket that holds everything worth eating. We split it open and stuff it with curried mince that's been on the stove since morning.

This is where the crowd builds. A full rack of beef ribs, rubbed with paprika and coriander, slow-turned over hardwood coals for four hours until the bone pulls clean. We only do this on weekends. If you smell it from two stalls away, that's the point.
